Healthy Greek Salad

Mediterranean style food is one of my fav's! With all the bright colors (eat a rainbow, you always hear!) and with Summer here it's a little easier to get these veggies fresh too! There is backed research that the Mediterranean Diet works! Filled with veggies, fruit and fresh fish it is believed to reduce cancer, Alzheimers & Parkinsons! Plus it lowers your LDL cholesterol (the bad kind!) So why not give it a try with the yummy Greek Salad!?


And just how I like it, super simple! Plus the dressing I used is from Primal Kitchen - I am not a big fan of jarred dressing but I fully support Primal Kitchen as their ingredients are simple and you can actually pronounce them! All you need to make this salad is;

1 orange pepper, diced

1 cup cherry tomatoes, sliced

1/2 cup kalamata olives, sliced

1/2  large English cucumber, chopped

1 cup chickpeas

1/4 cup fresh feta cheese (more if you like!)

Fresh parsley

Primal Kitchen Greek Dressing  (just use enough to cover and mix well!)

Feel free to switch up the veggies or use other colored peppers. But I love this combo and colors - looks so pretty and we do eat with our eyes!

Ingredients:

1 orange pepper, chopped
1 cup cherry tomatoes, sliced
1/2 cup kalamata olives, sliced
1/2 English cucumber, chopped
1 cup chickpeas, drained and rinsed
1/4 cup feta cheese (crumbled on top)
1/4 cup fresh parsley
1/2 cup Primal Kitchen Greek Dressing (more if needed)

Instructions:

1. Add all ingredients to a large bowl and toss gently. Pour dressing over right before serving. 

2. Best eaten right away or save for a day or 2 in the fridge with no dressing. (dressing may make it soggy)
