Mediterranean Turkey Burgers
So, it has been almost a year that I went mainly plant based on my diet. Besides the overwhelming evidence of the health benefits, my body was just not craving meat anymore. Turning 40 has taught me to listen to my body and to what it needs. While I was never a big meat eater to begin with, grilled chicken and turkey were my go to's for lean protein and muscle recovery after my daily workouts.
So let's start with these bad boys! I love anything Mediterranean based so in went the olives, red pepper, red onions, tomatoes, and feta. All mixed in to make it super juicy -Yum! So many flavors here and so many options to have this burger. Bun, naked, over greens! I added in a side of zucchini fries from my prime day air fryer deal (seriously, get one!) Add in a cool Summer night in the backyard with the fam and it was nearly perfect!

Mediterranean Chicken Burgers

Ingredients
1 lb organic ground turkey meat
1/2 cup chopped tomatoes
1 red bell pepper diced
1/4 cup chopped kalamata olives
1/3 cup red onion chopped
1 large handful chopped spinach
2 cloves of garlic cloves chopped
1/2 cup feta cheese
1/3 cup chopped fresh parsley
1/3 cup chopped fresh basil
1/2 tsp cumin
1/2 tsp turmeric
1 tsp coriander
S&P to taste
Instructions:
1. Saute onion, pepper, and tomatoes for a few minutes.
2. Add spinach and garlic until wilted.
3. Add ingredients to a large bowl then add feta and turkey meat. Sprinkle in seasonings and mix well.
4. Form into patties (I got 6!) and grill on each side until cooked through.
5. Server over greens, on a bun, with avocado.....whatever you love most!
