Chickpea Salad Sandwich


I am always looking for something new to create in the kitchen to prevent food boredom!  As of today, (Jan. 2018) I am still sticking with a more plant based diet and so far I am feeling really good about it!  I have noticed that my bloating feeling I usually have and stomach pains have gone away - so something is working!  

When I made a big batch of tomato soup the other day I felt like having a toasted sandwich with it - maybe a grilled cheese I thought? (I have not gone vegan so I still have cheese here and there) then I came across a recipe for a no tuna sandwich that sounded perfect on crunchy toast!  I thought that would pair well with my warm tomato soup during these cold Winter months in Jersey...brrr....



I started with mashing chickpeas (or any white bean will do - maybe even black?!) in a large bowl then adding in this honey mustard, organic tahini sauce (Why am I just jumping on this bandwagon now?!  I could use this stuff on everything! LOL), chopped onions, celery and pickles...yes pickles! Add in your fresh sea salt and ground pepper and whatever other spices or seasonings you like - I added in hot sauce to mine personally but left it out for the fam. Mix all the ingredients until well blended and that's it!  Super simple, right?! 

Voila!  I toasted up this sprouted grain bread (sprouted bread is easier to digest and doesn't hit your glycemic index as fast as regular bread) then added my favorite toppings such as fresh spinach and sliced tomatoes. It was delish if I don't say so myself!  I couldn't stop raving about it (I think my family thought I was nuts!) as I just get giddy when my recipes come out sooo good - because they don't always do (truth bomb!)

And yes I paired it with my tomato soup for the perfect warming meal on that cool winter day. It was hit my the hubs (who has been taking this plant eating lifestyle rather well!) and my son enjoyed it too!! (as you may know, my daughter doesn't eat outside her comfort zone, sigh!) This is also perfect to make for meal prep as it will stay fresh in the fridge for a few days- just assemble the sandwich right before eating or even have it over a salad!  Great snack with crackers & fruit too!

Ingredients:

1 can chickpeas, rinsed & drained
1 tsp honey mustard
1 tbs maple syrup or honey
3 tbs tahini
1/4 diced onion (red or white)
1/4 cup chopped celery
1/4 cup chopped pickle
Salt & Pepper to taste
Dash of hot sauce if desired

Instructions:

1. Pour drained & rinsed chickpeas in a large bowl and mash with a fork - you can leave some clumpy for texture.

2. Add in remaining ingredients. Taste and adjust as needed.

3. Toast bread and scoop about a 1/2 cup onto one slice of bread then add your toppings on to the other.

4. Put together and enjoy!
