Tequila Lime Avocado Salad!!



With the weather finally warming up here in Jersey I get excited to start BBQ’ing and thinking of new healthy(ish) types of cold salads to make and to bring to parties.  I own this bottle of tequila called 901 (for those of you who know me know that I am a huge Justin Timberlake fan and this is his line of tequila)  Anyhoo, I have yet to really use it and I happen to have a bunch of limes on hand so I put the two together and voila!  Tequila Lime Avocado Salad!  I checked my kitchen to see what I could add and I found black beans, avocado, limes, threw in some fresh tomatoes and cucumbers and added some fresh parsley, S&P some Italian spices and EVOO. (ok I found a lot!)


The tequila is not too overpowering but adds a nice zing to it! If you are not a drinker – then just skip it.  It will still be delicious!  Plus swap and add any ingredients you have on hand or prefer!
I started with dicing up the veggies and getting the avocado ready to slice. I love Target’s Simply Balanced Organic Beans (they have different types of beans) plus they are not in a can, bonus!!!  Take a look at the nice 901 tequila bottle!!  (told you I was a fan!)

After chopping up the veggies, dicing up the avocado, draining and rinsing the beans I threw them in a big bowl and mixed it all together.


Also, had to share the EVOO that I use – had this in Eataly in NYC and it was delicious!  If you are ever in NYC you must check that place out!




 Added the tequila and EVOO, cut and squeezed the limes (I so need to invest into that lime squeezer thingy!) Sprinkled on the spices.




Here is all the yummy goodness mixed together.  Serve right away so the avocado doesn’t turn too brown.  Enjoy and let me know what you think or if you used other ingredients.




1 pint cherry or mixed tomatoes, chopped
1 cucumber diced
1 can or box beans (I used black)
1 avocado diced
2 limes
2 tsp Tequila
2 TBS EVOO
S&P to taste
Fresh parsley, basil (any Italian seasoning will do)

Instructions:
Add chopped veggies, avocado, drained and rinsed beans to a big bowl
Cut and squeeze limes over the bowl (this will also help keep the avocado from turning brown)
Add the Tequila and EVOO
Season with spices
Toss gently to coat everything
Chill for a few minutes to let the flavors hang out and get to know one another-they like that!
if serving later or bringing to a party you can add the avocado later

Serve and Enjoy!!
