Ingredients
- 32oz carton low sodium chicken broth
- 1½ cups tomato sauce or 1 box pompi crushes tomatoes
- 1 15 oz can low sodium cannellini beans (drained & rinsed)
- 3 boneless skinless chicken breast cubed
- ¾ tsp red pepper flakes
- 6 oz baby fresh spinach
- Salt & Pepper to taste
- ½ cup chopped fresh basil
- ½ cup fresh grated parm cheese
Instructions
- In stock pot bring chicken broth, sauce, beans and red pepper flakes to a boil.
- Turn heat to low and simmer.
- Season chicken breast with s&p and add to pot.
- Let chicken cook while stirring occasionally - about 10 minutes.
- Add in spinach and let wilt.
- Let cook about 5 minutes more.
- Add in basil and top with grated cheese.
- Season with s&p to taste.
