Chicken, Spinach and White Bean Soup

So bust out that soup pot and get started!  Your meal prep is only minutes away!  
This also pairs well with my paleo style corn bread!  Enjoy!

  • 32oz carton low sodium chicken broth
  • 1½ cups tomato sauce or 1 box pompi crushes tomatoes
  • 1 15 oz can low sodium cannellini beans (drained & rinsed)
  • 3 boneless skinless chicken breast cubed
  • ¾ tsp red pepper flakes
  • 6 oz baby fresh spinach
  • Salt & Pepper to taste
  • ½ cup chopped fresh basil
  • ½ cup fresh grated parm cheese
  1. In stock pot bring chicken broth, sauce, beans and red pepper flakes to a boil.
  2. Turn heat to low and simmer.
  3. Season chicken breast with s&p and add to pot.
  4. Let chicken cook while stirring occasionally - about 10 minutes.
  5. Add in spinach and let wilt.
  6. Let cook about 5 minutes more.
  7. Add in basil and top with grated cheese.
  8. Season with s&p to taste.
  9. Enjoy!
