Soup Season is upon us! I love making a big batch of soup to have during the week. Whether for lunch, a quick dinner or freeze for later soups are a simple dish you can create to your liking! Plus they are an easy way to get in some veggies! This chicken soup is an easy one for sure! With few ingredients it a time saver and budget friendly too! You can make your own tomato sauce or for the best jarred version look for low sodium and in a glass jar. I like the brand Pompi. While not in a glass jar, they are in a BPA free container. To add a little fiber I include cannellini beans & fresh spinach. You can always switch it up to your liking with kale or red kidney beans. I even add a little red hot pepper flakes in it to give it a kick!
